The Science of Fasting

So, what's happening inside your body when you fast? Your body operates in two main states: the fed state and the fasted state.

The fed state starts when you begin eating and lasts for about 3 to 5 hours as your body digests and absorbs the food. During this time, it's difficult for your body to burn fat because your insulin levels are high. Insulin is a hormone that helps your cells use glucose from your food for energy and tells your body to store any excess energy as fat.

The fasted state begins after your body has finished processing your last meal, usually around 8 to 12 hours after eating. In this state, your insulin levels are low. With no incoming food energy, your body has to tap into its stored energy reserves. It first uses up stored glucose (glycogen) and then begins to burn stored fat for fuel.

Intermittent fasting is simply a way to extend the time your body spends in this fat-burning, fasted state.
