Think of each track as a layer in your final sprite sheet.

Keeping parts on separate tracks is critical because game engines like Unity require clear spatial boundaries to slice a sprite sheet into individual animation frames. If your character's arm overlaps with their torso on the same layer, the engine won't be able to separate them cleanly. This organized approach not only helps during the animation phase but is fundamental for a successful import.
