The Baker's Percentage

To master pizza dough, you need to speak the language of bakers. The most important phrase is "baker's percentage." This system expresses every ingredient's weight as a percentage of the total flour weight. Since flour is always 100%, everything else is scaled relative to it.

Why bother? It makes recipes incredibly consistent and easy to scale. A dough with 1000g of flour and 650g of water is a 65% hydration dough. A dough with 500g of flour and 325g of water is also a 65% hydration dough. The feel and behaviour will be identical. You just need to know the percentage to replicate it at any size.

Salt is typically 2-3%, yeast around 0.5-2% (depending on the type and fermentation time), and oil might be 1-5%. By using percentages, you can easily adjust one ingredient without having to recalculate everything else.

How Hydration Shapes the Crust

The amount of water in your dough dramatically changes its personality. A wet, sticky dough behaves very differently from a firm, dry one. This water content, or hydration level, is the single biggest factor in determining your final crust's texture, from the crispness of the base to the size of the holes in the crumb.

Changing the hydration of a dough – that is, how much water it contains – can have major effects on the crust and the crumb; wetter doughs tend to give a more open texture with bigger holes, whereas drier doughs tend to have a tighter crumb structure.

Different pizza styles are built on different hydration levels. A classic Neapolitan pizza might sit around 60-65%, while a light and airy Roman-style pizza al taglio often pushes 75% or even higher. Handling these high-hydration doughs requires practice, as they can be incredibly sticky, but the reward is a uniquely tender and open crumb.

Flour's Critical Role

Hydration doesn't exist in a vacuum; it's a relationship with flour. The type of flour you choose dictates how much water it can absorb and the kind of gluten network it will form. The two most common choices for pizza are Italian '00' flour and bread flour.

is extremely fine, like powder. It creates a wonderfully soft, extensible dough that's easy to stretch thin. It's the standard for Neapolitan pizza, which is cooked for just 60-90 seconds in an extremely hot oven. The dough doesn't need immense structural strength, just tenderness.

Bread flour, on the other hand, has a higher protein content. More protein means more gluten, which creates a stronger, chewier, more elastic dough. This is ideal for home ovens, which can't reach the temperatures of a wood-fired oven. The stronger structure holds up better during a longer bake, resulting in a satisfyingly chewy crust.

A crucial thing to know is that not all flours are equally thirsty. Higher-protein flours generally absorb more water. This means a 65% hydration dough made with one brand of bread flour might feel much stiffer than a 65% hydration dough made with a lower-protein '00' flour. Always be prepared to adjust your water by a small amount based on how the dough feels.
