What's Inside an Egg

At a glance, an egg seems simple. But its structure is a marvel of natural engineering, designed to protect and nourish a potential life. It consists of three main parts: the shell, the white, and the yolk.

The shell is the egg's first line of defense. It's a hard, protective layer made mostly of calcium carbonate. Though it feels solid, the shell is porous, containing thousands of tiny holes that allow air and moisture to pass through. A thin outer layer called the bloom or cuticle helps keep bacteria out.

Inside the shell are two membranes that provide another barrier against bacteria. Between these membranes, usually at the large end of the egg, is an air cell. This pocket of air forms as the egg cools after being laid and grows larger as the egg ages.

The egg white, also called the albumen, accounts for most of an egg's liquid weight. It's about 90% water and 10% protein. The albumen consists of a thick layer and a thin layer. You might also notice two twisted, cord-like structures called chalazae (pronounced kuh-LAY-zee). These anchor the yolk in the center of the egg white, providing a cushion against shocks.

Finally, the yolk is the vibrant, yellow center. It contains all of the egg's fat and a little less than half of its protein. The yolk is also packed with vitamins and minerals, making it the most nutrient-dense part of the egg. A clear membrane called the vitelline membrane holds the yolk together.

A Nutritional Powerhouse

Eggs are one of the most nutritious foods you can eat. They are celebrated for their high-quality protein, which provides the essential amino acids our bodies need for building and repairing tissues. A single large egg offers about six grams of this vital nutrient.

But the benefits don't stop at protein. The yolk is a rich source of vitamins and minerals. It's packed with Vitamin D, crucial for bone health, and choline, which supports brain function and development. Eggs also provide Vitamin B12, riboflavin, and selenium.

Eggs, seemingly simple and unassuming, are nutritional powerhouses and versatile culinary ingredients that play a critical role in countless dishes worldwide.

While eggs contain cholesterol, recent studies have shown that dietary cholesterol has less impact on blood cholesterol levels for most people than previously thought. For most, enjoying eggs as part of a balanced diet is perfectly healthy.

Safe Handling and Storage

Properly handling and storing eggs is crucial to prevent foodborne illness, like salmonella. Follow these simple guidelines to keep your eggs safe and fresh.

First, always buy eggs from a refrigerated case. When you get home, store them in their original carton in the main body of your refrigerator, not the door. The temperature in the door fluctuates more, which isn't ideal for eggs. A constant temperature of 40°F (4°C) or below is best.

Before using an egg, inspect its shell. Discard any eggs that are cracked or dirty. Bacteria can enter through even a tiny crack. Always wash your hands, utensils, and countertops with hot, soapy water after they come into contact with raw eggs.

Fresh eggs can last for about three to five weeks in the refrigerator. While they might still be safe to eat after this period, their quality and flavor will decline.
