Kitchen Essentials

The Right Tools for the Job

Walking into a kitchen supply store can be overwhelming. There are gadgets for everything. But you don't need a drawer full of specialized tools to make great food. A few well-chosen essentials will handle almost any recipe and make your time in the kitchen much more enjoyable.

Start with a few essential tools, practice basic techniques like chopping, sautéing, and roasting, and prioritize whole, nutrient-dense ingredients.

Essential Utensils

These are the handheld tools you'll reach for constantly. Let's start with the most important one: a good knife.

If you buy only one quality item, make it an 8-inch chef's knife. It will be your go-to for chopping, slicing, dicing, and mincing. A smaller paring knife is also handy for peeling or detailed work, and a serrated knife is best for slicing bread and tomatoes.

Of course, a knife is useless without a cutting board. Choose a large one, either plastic or wood. Plastic boards are dishwasher-safe, while wooden boards are gentler on your knives but require hand-washing.

Next up are the tools for measuring and mixing. A set of measuring cups (for dry ingredients) and a liquid measuring cup are non-negotiable for following recipes accurately. You'll also need a set of measuring spoons. Get a few mixing bowls in various sizes. Glass or stainless steel are durable and won't absorb odors.

A sturdy silicone or rubber spatula is perfect for scraping every last bit from a bowl, and a wooden spoon is great for stirring anything on the stove, as it won't scratch your pans. Finally, a whisk is essential for beating eggs, mixing batters, and making vinaigrettes.

Cookware and Bakeware

You can cook a surprising amount of food with just three key pieces of cookware.

First, a 10 or 12-inch skillet, also called a frying pan. This is your workhorse for sautéing vegetables, cooking eggs, and searing meats. A non-stick version is very beginner-friendly.

Second, a medium-sized saucepan (about 2-3 quarts). This is a pot with high sides and a long handle, perfect for making sauces, cooking grains like rice or quinoa, and reheating soups.

Third, a large stockpot (6-8 quarts). This is for bigger jobs, like boiling pasta, making a large batch of soup, or simmering stock.

For the oven, a single 9x13-inch baking dish is incredibly versatile. You can use it for everything from roasting chicken and vegetables to baking casseroles and brownies. Glass or ceramic are both excellent choices.

Basic Appliances

You can skip the fancy, single-use appliances for now. A reliable blender is a great starting point for making smoothies, puréed soups, and sauces. A microwave is also invaluable for quickly reheating leftovers, which helps reduce food waste and saves you from cooking every single meal from scratch.

Take care of your tools, and they'll take care of you. Quality kitchenware can last a lifetime with proper maintenance.

Proper care is simple. Always wash and dry your knives by hand, as the heat and detergents in a dishwasher can damage the blade and handle. Use only wood or silicone utensils on non-stick pans to avoid scratching the surface. Finally, give your tools a quick wash after you're done using them. Letting food sit and dry on them makes cleanup much harder.

Time to see what you've learned. This quiz will test your knowledge of the essential tools and their functions.
