You already know what you like in a wine. But knowing why you like it, and being able to describe its quality objectively, is a different skill entirely. It’s the transition from being a wine drinker to a wine taster. This requires moving beyond personal preference and adopting a structured method to analyze what’s in your glass.
Professionals use a consistent framework to ensure every wine is judged by the same criteria. The most widely recognized is the (SAT), developed by the Wine & Spirit Education Trust. This method breaks down a wine into its core components, allowing for a detailed and objective assessment. It creates a shared language for tasters worldwide, turning subjective impressions into a structured evaluation.

Deconstructing the Structure
Before you can even think about whether a wine smells like cherries or leather, you need to understand its structure. These are the non-flavor components that form the wine's backbone: acidity, tannin, alcohol, and body. They are felt more than they are tasted.
Acidity is what makes a wine feel refreshing and vibrant. You perceive it as a mouth-watering sensation on the sides of your tongue, much like biting into a crisp green apple. High-acid wines, such as a German Riesling, feel zesty and sharp. Low-acid wines, like many Viogniers from a warm climate, feel rounder and softer. Without enough acidity, a wine can taste flat or flabby; with too much, it can be unpleasantly tart.
Next up are tannins. Found primarily in red wines, are compounds that come from grape skins, seeds, and stems, as well as from aging in oak barrels. They create a drying, slightly bitter, and astringent sensation in your mouth, particularly on your teeth and gums. Think of the feeling of drinking very strong, over-steeped black tea. It's not just about the amount of tannin, but also the quality. Ripe, well-managed tannins can feel silky or velvety, adding pleasant texture and complexity. Unripe or harsh tannins feel coarse, green, and grippy, making the wine seem aggressive.
Alcohol is more than just the intoxicating element; it's a key structural component. It contributes to a wine's body and viscosity. You perceive alcohol as a warming sensation in the back of your throat. Higher alcohol levels can make a wine feel heavier and richer on the palate. A wine with 14.5% alcohol will feel noticeably weightier than one with 12.5%.
This sensation of weight is what we call body. Body is the overall texture and feel of the wine in your mouth. Think of it like milk: a light-bodied wine feels like skim milk, a medium-bodied wine is like 2%, and a full-bodied wine has the weight and texture of whole milk. A light-bodied Sauvignon Blanc is nimble and delicate, while a full-bodied Cabernet Sauvignon is powerful and mouth-filling.
Putting It All Together: BLIC
Once you can identify the structural components, you can begin to assess a wine’s overall quality. Professionals often use the framework for this. It's an acronym that stands for Balance, Length, Intensity, and Complexity.
Balance: Are the structural components in harmony? In a well-balanced wine, the acidity, tannins (if present), alcohol, and fruit flavors all work together. No single element sticks out awkwardly. A high-acid wine needs enough fruit concentration to not taste sour, and a high-tannin wine needs enough body and fruit to not feel overly astringent.
Length: How long do the desirable flavors linger on your palate after you have swallowed or spit the wine? This is also known as the finish. A simple wine might disappear almost instantly, while a high-quality wine will have a finish that lasts for 30 seconds or more, evolving and revealing new nuances.
Intensity: How powerful are the aromas and flavors? An intense wine makes a strong impression on the nose and palate. It’s not about being loud, but about being clear and well-defined. Some grapes, like Sauvignon Blanc, are naturally high-intensity (pronounced), while others, like Pinot Grigio, are often more delicate (light).
Complexity: Does the wine have multiple layers of flavor? A simple wine might taste of one thing, like lemon. A complex wine will offer a wide range of aromas and flavors that evolve as you smell and taste it. You might find fruit notes, floral hints, spicy characteristics, and savory tones all in one glass.
By using the SAT to deconstruct a wine and BLIC to evaluate its quality, you arm yourself with the tools to analyze any wine with confidence. This systematic approach transforms tasting from a simple act of enjoyment into a fascinating analytical exercise.
