Measuring Protein Quality

Not all proteins are created equal. Two protein sources can have the same gram count on a label but offer vastly different nutritional benefits. To quantify this difference, scientists use scoring systems. These systems help us understand how well our bodies can digest and use the amino acids from the protein we eat.

One of the most established methods is the Protein Digestibility Corrected Amino Acid Score, or PDCAAS. This score evaluates a protein based on two factors: its specific amino acid profile and its digestibility. It compares the food's content of the most limiting essential amino acid—the one present in the lowest quantity relative to our needs—against a standard reference protein profile.

The final score is expressed as a value between 0 and 1.0. A score of 1.0 means that after digestion, the protein provides 100% or more of the essential amino acids required.

A More Precise Measure

While PDCAAS has been widely used, it has a key limitation. It measures digestibility based on fecal analysis, which doesn't account for amino acids absorbed by bacteria in the large intestine. This can make a protein's digestibility appear higher than it actually is for human use.

To address this, a newer method called the Digestible Indispensable Amino Acid Score (DIAAS) was developed. DIAAS is considered more accurate because it measures the digestibility of each individual essential amino acid at the end of the small intestine (the ileum). This location provides a truer picture of the amino acids available for our bodies to absorb and use.

Scores in Action

Let's see how these scores work by comparing a high-quality protein like whey with a low-quality one like collagen. Whey protein, derived from milk, contains all the essential amino acids in proportions that are highly usable by the body. It consistently scores a 1.0 on the PDCAAS scale and has a high DIAAS score.

Collagen, on the other hand, tells a different story. It is rich in specific amino acids like glycine, proline, and hydroxyproline, which are great for skin and joint health. However, it is critically low in several essential amino acids, including tryptophan, methionine, and isoleucine.

Because it lacks a complete profile of essential amino acids, collagen cannot support overall protein synthesis on its own. Its DIAAS is often near zero, meaning it's not a suitable source for meeting your body's primary protein needs.
