Because it provides a powerful insight. CAPM isolates the one type of risk that the market should, in theory, reward you for taking on: systematic risk. This is the risk you can't get rid of, no matter how much you diversify your portfolio. By stripping away all other complexities, the model helps us focus on the fundamental trade-off between this unavoidable risk and the return you should demand for bearing it.
