What Is Aspartame?

If you've ever reached for a diet soda, sugar-free gum, or light yogurt, you've likely encountered aspartame. It's one of the most common artificial sweeteners in the world, used to reduce the calorie count in foods and drinks while keeping them sweet.

Aspartame is one of the most common sweeteners and is widely used in low-calorie food and drinks like Diet Coke and Diet Pepsi because, although it does contain calories like regular sugar, it’s used in lesser quantities because it’s 200 times sweeter.

That incredible sweetness means that only a tiny amount is needed to match the taste of sugar. This is the main reason for its popularity. Manufacturers can create low-calorie or zero-calorie products that still satisfy a sweet tooth. But what exactly is this substance?

A Peek at the Molecule

Unlike many other artificial sweeteners, aspartame is not a carbohydrate. It's a type of chemical called a dipeptide. This means it's made by joining two amino acids together, which are the building blocks of proteins.

Specifically, aspartame is created from two amino acids: aspartic acid and phenylalanine. A small component called a methyl group is also attached, which is key to its sweet taste.

Because your body digests aspartame like any other protein, it does technically contain calories. But since it's about 200 times sweeter than sugar, the amount needed is so small that the calories are negligible.

Since one of its components is phenylalanine, all products containing aspartame must carry a warning for people with a rare genetic condition called phenylketonuria (PKU). Individuals with PKU cannot metabolize phenylalanine properly, so they need to avoid it in their diet.

Where Can You Find It?

Aspartame was first approved for use in the United States in the early 1980s. Since then, it has become a key ingredient in thousands of products worldwide. Its ability to provide sweetness without the calories of sugar made it an instant hit for the growing market of 'diet' and 'light' foods.
